  • Preparation time: 10 minutes
  • Cooking time: 30 minutes
  • Total time: 40 minutes
  • Serves: 4, 16 falafels

  • 1.5 cups mung beans (soaked over night, drained)
  • 2 tbsp. Alver Golden Bean Protein
  • 1 cup fresh parsley
  • 1 cup chopped red onion
  • 6 garlic cloves roughly chopped
  • 4 tsp. ground cumin
  • 2 tsp. ground turmeric
  • 1 tsp. ground coriander
  • 2 lemons, pressed for juice

Put a spoonful of Golden Bean into a little water and start dissolving it by stirring. Little by little, add more water and keep stirring. One cup of water gives you a nice creamy thick paste. Place the mung bean protein paste in a blender together with all the other ingredients.

Blend until the mixture is coarse. Season to taste. Transfer the mixture into a large bowl and cover it with a lit. Put it in the refrigerator for at least 30 minutes.

Preheat the oven to 200 °C. Grease a baking sheet with oil or line it with parchment paper. Shape the mung bean mixture into 16 even-sized balls and place them on the baking sheet. Brush the top and bottom of the falafel with a little bit of olive oil and sprinkle with coarse sea salt.

Bake for 20-25 minutes. Place your mung bean falafel on a bed of fresh salad. Serve with your favorite dip.

About Mung Beans

All legumes are packed with nutrients and the mung bean is no different. It is not only a sustainable source of protein but also rich in potassium, folate, magnesium, vitamin C, various B vitamins, and fiber. Mung beans are easily digestible which makes them a great alternative for people who are otherwise sensitive to beans.

You can buy mung beans in whole, split, or hulled form. When you opt for whole beans, it is recommended to soak them over night. When you then puree them the next day, you get a nice thick falafel batter that will not disintegrate once cooked.
