Protein-Rich Vegan Mushroom Penne

January = Veganuary. Everywhere on the planet, people are motivating each other to renounce products of animal origin during January – and beyond – in order to make a significant contribution to the global effort of preserving the planet. January is also the beginning of a new year and thus the perfect time to question old habits. Many people aspire a healthier lifestyle and for an ever growing number that equals a plant-based diet.

The Veganuary initiative aims to help with this process by informing, inspiring and motivating. Vegans around the globe share insights into their path of becoming vegan, celebrity chefs propose cookbooks full of healthy recipes, and everyone who wants to contribute in one way or another to the movement can do so in tagging @weareveganuary and adding the hashtag #veganuary to their posts.

First up, this fantastic pasta recipe with our protein-rich penne. Here the ingredients you will need:

250 gAlver high protein Penne
2 tbspolive oil
1medium onion
1clove of garlic
200 gmushrooms
1 pinchChili flakes
HandfulBasil

Begin by bringing a large pot of salted water to a boil. Next, heat a large pan to medium high heat.

Dice the onion and garlic clove and slice the mushrooms. Add the olive oil to the pan and begin frying the onion and garlic. Once the onions have softened, add the mushrooms and a pinch of both salt and pepper and cook for approximately 4 minutes.

Once the salted water is boiling, add the Alver protein pasta and cook according to the package instructions.

Continue stirring the mushroom and cooking for 2 minutes. Also, add the pinch of chili flakes if desired.

Reserve one mug of the starchy pasta water and then drain off the pasta. Immediately, add the hot cooked pasta to the pan of mushrooms. Remove the pan from the heat and continue to stir everything together. Add a splash of the reserved starchy water to help the sauce reach your preferred consistency. Add fresh basil leaves. Serve immediately.

This recipe serves two people.
